In the meantime, I wanted to share one of my favorite cauliflower rice dishes with you: cilantro lime cauliflower rice!
I still can’t believe looking at this picture that there’s not one bit of actual rice in that dish – it’s all cauliflower! If haven’t heard of cauliflower rice before, get ready because your life will never be the same…
I first discovered cauliflower rice around 2012 when I began experimenting with cutting grains out of my diet. As an Asian-American, I grew up on rice – I couldn’t imagine removing it from my life! However, once I embraced cauliflower rice I definitely didn’t miss it as much.

This is one of my favorite cauliflower rice dishes inspired by yep, you guessed it, the rice at Chipotle.
One of the hardest things for me to give up was their amazing cilantro lime rice so when I began embracing a grain-free lifestyle this was one of the first dishes I just had to recreate. (Of course, my version is a bit healthier as it doesn’t involve the addition of vegetable oil.) Serve this as the base for your next burrito bowl or with any Mexican-themed entree!
How To Make: Cilantro Lime Cauliflower Rice

INGREDIENTS
- 1 medium head of cauliflower
- 1 tablespoon coconut oil
- 2 garlic cloves, minced
- 1 tablespoon fresh lime juice
- 1⁄4 cup fresh cilantro, finely chopped
- Sea salt to taste
INSTRUCTIONS
- Process the cauliflower into cauliflower rice. (Tutorial Here.)
- Add coconut oil to a large pan over medium heat.
- Add the garlic, cauliflower rice, and lime juice.
- Cook for 8 – 10 minutes, until cauliflower rice is tender.
- Toss with cilantro.
- Add salt to taste and serve hot.
